Cavit swept onto the radar of American wine lovers in the 1970s as an early pioneer of a then-obscure white grape called pinot grigio. Prized for its crisp, elegant character, stone/citrus fruit flavors, and delicate, floral aromas, pinot grigio is a demanding grape to cultivate, but has flourished in northern Italy since the early 19th century.

Mapping Trentino Vineyards
Welcome to Trentino, one of the most beautiful vineyard regions in the world. This mountainous district is home to steeply sloped vineyards that are quite challenging to farm and are hand tended by Cavit’s network of heritage family growers (who account for 60% of the area’s grape cultivation). The relatively small average plot size — .81 hectare / two acres — allows for every vine to receive highly attentive care. This level of nurturing helps ensure that each growers’ grapes meet Cavit’s rigorous quality and consistency standards. Every single grape must represent the absolute best varietal characteristics and express this unique Italian terroir.
Using PICA, a revolutionary vineyard mapping program, Cavit and its growers are able to catalog data from each plot of vines — elevation, angle of slope, varieties planted, and soil types are among the data sets captured, providing an incredibly detailed view of the entire region. Using this data, Cavit’s agronomist team and the growers collaborate on key viticultural decisions throughout the year, including the exact time to harvest each vineyard block.
Terroir
The Cavit winery is located in Trentino, Italy, a picturesque landscape of mountains, lakes, apple orchards, and medieval castles. Vineyards in this region sit atop rocky, well-draining soils. They benefit from the warming effects of the “Ora del Garda” (a dry, balmy breeze that sweeps across nearby Lake Garda and protects the fruit from moisture and disease) and contrastingly cool evenings thanks to the alpine air flowing down from the Dolomites. This diurnal shift promotes rich, intense aromas and flavors in the grapes.
Trentino’s combination of the right soils, altitudes, temperatures, and sunny, southern exposures — along with painstaking vineyard management — is the perfect recipe for viticultural excellence.
The Mega-Talented Local
Fabrizio Marinconz is a native to Trentino (one of the most prolific wine regions in Italy). He earned his undergraduate degree from the University of Trento and his graduate degree from Rheinmain University — known for practice-orientated training. Fabrizio began his career building his skills with some of the most accomplished winemakers throughout Italy, the U.S., and New Zealand, returning home to Trentino to work for Cavit in 2006.
In 2020, Fabrizio was given the key position of Associate Winemaker and is now fully responsible for the production of all Cavit wines. Fabrizio has been instrumental at blending traditional winemaking with forward-thinking creativity.
Commitment to Sustainability
Cavit limits the use of pesticides and practices eco-sustainable farming, including planting of cover crops, sustainable pest control, and use of natural fertilizers. In an effort to reduce water waste, the vineyard team use modern systems that utilize a high-precision irrigation process, using water only when necessary.
Beyond the vineyard, packaging is another area where Cavit prioritizes sustainability. All Cavit labels and cases are printed using water-based ink that is solvent-free and contains no chemical compounds. Glass used to produce Cavit wine bottles is 80% recycled. The winery has also transitioned to lighter bottles, reducing transport and handling weights to further reduce their carbon footprint.
They have installed 3,200 solar panels on the roof of their warehouse and winery — these panels generate around 800 Mwh (megawatt hours) per year, and power 100% of the electricity used during the winemaking process.
