Background

Using malted Irish barley, un-malted Irish barley, and Irish Barra oats, this elegant Single Pot Still Irish Whiskey follows on from the inaugural release with a more bourbon cask focus and will be a staple expression for The Shed Distillery of PJ Rigney into the future.

Aging

Aged primarily in Kentucky Bourbon & with some Sherry Oloroso casks, Head Distiller, Brian Taft has highlighted the characteristics of this flagship expression as being uniquely creamy and fruity, yet spicy and dry. Tasting Notes

Amber Toasted nuts, vanilla honey, and toffee notes accompanied by sweet dried fruit Winter spice, redcurrant, and coconut shift elegantly to deeper notes of dark chocolate, almond, and oak. A creamy, full bodied mouthfeel with unexpected depths.

This whiskey from Drumshanbo was crafted from a complex mash of malted Irish barley, un-malted Irish barley, and Irish Barra oats. Triple distilled in copper pots and matured for at least five years in first-fill bourbon and Oloroso sherry casks, Drumshanbo's Single Pot Still dishes up cereal and oak notes from nose to finish, with a wisp of savory sherry cask influence peppered throughout. The bourbon barrel flavor shines through on the palate, adding layers of caramel, chocolate, and spice. -T.M.

Founded in 2014, The Shed Distillery delivers the first whiskey from the western province of Connacht in over a century. Polished creamy sweetness and aromatic spices herald this striking dram, which has been triple-distilled and then matured in first-fill bourbon and oloroso sherry casks. Aromas of caramel, brioche, satsuma, and dried apricot draw you in, ushering in a luscious palate of pear, apple, and freewheeling spices bolstered by dried citrus, lime, and toasted coconut.
