VinificationGrapes are hand-harvested and de-stemmed. Fermentation takes places in stainless steel tanks. The wine is then aged for 22 months in oak barrels 1/3 in new, 2/3 in 1 to 3-year-old oak barrels, then fined with egg whites and bottled unfiltered.
