Hailing from the world-renowned Cavit winery, makers of America’s most trusted Italian wine,* Bottega Vinaia’s grapes are grown in pockets of high-altitude terroir across Trentino, totaling a mere 120 hectares / 297 acres — less than 2% of the total area of Cavit vineyards. The grapes are vinified and bottled on-site and under the expert direction of chief winemaker Fabrizio Marinconz, whose trademark style of purity and precision is on full display in every wine.

The Trentino Factor
The Cavit winery is located in Trentino, Italy, a picturesque landscape of mountains, lakes, apple orchards, and medieval castles. Vineyards in this region sit atop rocky, well-draining soils. They benefit from the warming effects of the “Ora del Garda,” (a dry, balmy breeze that sweeps across nearby Lake Garda and protects the fruit from moisture and disease) and contrastingly cool evenings thanks to the alpine air flowing down from the Dolomites. This contrast promotes rich, intense aromas and flavors in the grapes.
The vineyards themselves require more working hours than many other Trentino vineyards and up to twice the number of working hours as the average Cavit vineyards. Why? By hand, workers tend to each vine (which must be 15 to 20 years old) to prune off weaker buds, perform rigorous canopy management, and green harvesting to ensure low yields of only the finest quality grapes.
This combination of the right soils, high altitude, large diurnal swing, and a sunny, southern exposure — along with painstaking vineyard management — is the perfect recipe for excellence.
The Mega-Talented Local
Born and raised in Trentino, it was only natural for Fabrizio Marinconz to find a home at Cavit. He received his degree in Viticulture and Enology in 2005 from the prestigious San Michele all’Adige Agricultural Institute (now the Edmund Mach Foundation) and Germany’s Hochschule Geisenheim before joining Cavit in late 2006 as a vineyard technician. This early experience working every day with the Cavit growers gave Fabrizio an incredible base of knowledge and, in 2010, he was invited to join the winemaking team. Fabrizio was promoted to Associate Winemaker in 2020 and now proudly oversees production of all still wines, including Bottega Vinaia.
