Located along the coast of northeastern Spain, Barcelona is one of the world’s top tourist, economic, and cultural centers, as well as a global leader in the fields of commerce, education, entertainment, science, and the arts. This effortlessly elegant Cava is made just 45 minutes outside the city in the Penedès region of Catalonia, which is home to 95% of the total Cava production in Catalonia. Cava holds Denominación de Origen (D.O.) status in Spain, meaning it must be produced following specific guidelines (and within a specific geographic border) to bear the name Cava on the label.

Chic Barcelona Cava is made by winemaker Jordi G. Martí using the traditional method, the same process as Champagne. The cuvée is assembled after primary fermentation and then bottled and stored in an underground cellar where it undergoes a secondary fermentation. As a result, the wines have extremely fine bubbles plus a broad array of flavors.

Ideal for intimate dinners and large gatherings alike, Chic Barcelona Cava makes a wonderful aperitif, thanks to its light, crisp acidity that helps open the palate without being overpowering. Feel free to let the wine chill in an ice bucket — the waterproof label will keep it looking beautiful. Hand Harvested in Catalonia’s Cool Penedès Region

Chic Barcelona Cava hails from the Penedès region of Catalonia in northeastern Spain, which lies about 45 minutes inland from Barcelona. Penedès has a cool Mediterranean climate with a mild, average temperature of 16°C / 60°F . The region’s continental influence produces cold winters and slightly milder summers, resulting in a slower maturation of the grapes which, in turn, yields full and fresh wines.

The Brut release is a classic blend of macabeo, xarel-lo, and parellada (the three main grape varieties used in Cava), while the rosé is made from 100% trepat. This rare grape variety comes from the land of Conca de Barbera Valley in south Catalonia. The grapes used in Chic Barcelona Cava are hand harvested, which ensures only the best bunches are picked and reduces the risk of damage to the fruit.

Traditional Method Cava From Catalonia

Winemaker Jordi G. Martí makes Chic Barcelona Cava using the traditional method (also known as the méthode Champenoise” or méthode classique). In this process, the secondary fermentation occurs in the bottle, which results in the fine bubbles and broad complexity of flavor that characterize traditional method sparkling wines.

For the Brut release, the grapes are de-stemmed separately and the pulp is cooled to 14°C / 57°F before a gentle pressing with a pneumatic pump. The wine ages for at least 12 months on the lees, as opposed to the minimum nine months required for D.O. Cava, which gives it greater depth, an elegant fizz, and more refinement than many of its counterparts.

Chic Barcelona Cava Rosé has a pre-fermentation maceration that occurs for 16 to 20 hours at a temperature between 12 to 17°C / 54 to 63°F to extract the lovely pink color and primary fruit aromas.

Jordi G. Martí was born in 1985 in Vilafranca del Penedès, which is at the heart of the Penedès wine region. A passionate winemaker, he has worked for many years to craft Cavas and other wines in Penedès. He has a deep knowledge of the entire winemaking processing, starting in the vineyards and continuing to the end of a wine’s journey in the cellar.
