Bellini

The war had just ended. In the streets and the air, the tension of the years of oppression could still be felt yet a newfound freedom was welcome as a daily celebration. Giuseppe Cipriani had an epiphany to dedicate a cocktail to peace when he was in his Harry’s Bar, a place that had only opened its doors seventeen years prior. He created a fresh drink with peach flavoured sweet notes whose pulp became the main ingredient. When an exhibition dedicated to Giovanni Bellini was being held at the Doge’s Palace in St. Mark’s Square, Giuseppe Cipriani saw assonance between the chromatic texture and the idea behind his cocktail, leading to the creation of The Bellini.

The fruit of the white peach is round with a skin that is always whitish in colour tending to green, even as it ripens. The flesh is white, slightly reddish in the area closest to the stone. It has a consistent aroma.
