Background

Pyros Wines is a terroir-driven project created with the aim of positioning the Pedernal Valley at the top of Argentinean viticulture, through its distinctive soils and high altitudes. The diverse terroir and natural beauty were inspirations to Mijndert Pon, the founder of Bodegas Salentein and Bodegas Callia. His vision to showcase the exceptional fruit grown in the Pedernal Valley led to the creation of the region’s first wine brand, Pyros. Globally, the winery is leading the promotion of this singular valley with its experimental and micro vinification plantings, distinctive soils, and high altitudes. Their goal is to position the Pedernal at the top of Argentinean viticulture. Propelling these efforts is Pyros winemaker, Paula González, who is leading the experimental and research efforts at the winery.

TERROIR & VINTAGE NOTES

Of the 72% of Malbec used for this blend, 60% was sourced from the La Pampa estate, and the balance from the El Oasis estate. The 9% Cabernet Sauvignon clones 169 and 337 and 5% Petit Verdot are from the El Oasis estate. The 7% Merlot is from the La Pampa estate. The vines at these estates are trellis-trained and their alluvial soils are loamy sandy with loess deposits (a wind-deposited sediment) and calcium carbonate encrusted stones.

Winemaking & Aging

Hand harvested grapes are picked in March. Once destemmed, grapes are fermented in a combination of stainless steel (80%) and French oak barrels for 21 days, with both inoculated and native yeasts. Batonnage and 20% malolactic fermentation. Aged in stainless steel (80%) and barrique (1, 2, 3 and 4th use) for six months, followed by three months bottle ageing.

Tasting Notes

Intense and complex on the nose, with predominant aromas of peach, pear and green apple, followed by floral notes such as jasmine and white flowers. Hints of minerals contribute to its complexity.

Coming from San Juan, Argentina’s second largest wine-producing region, this white offers delicate notes of white flowers, lime and herbs. A light note of honey adds to its complexity. The mineral-textured palate has weight and shows white peach, lime and chamomile that extend to the lingering finish. Vigorous acidity balances it all out. Taub Family Selections. Hidden Gem. —J.V.

I tasted my first white from Pyros: the 2021 Appellation Chardonnay. It's a varietal barrel-aged example (only 20% of the volume) with moderate ripeness, 13% alcohol and very good freshness, reflecting a cool year. It has a combination of apples, white flowers and spices and is clean and expressive, with a medium-bodied palate with a chalky texture and supple flavors...-L.G.

The 2021 Chardonnay Pyros Appellation from the Pedernal Valley, San Juan was aged for six months in 20% new oak. Yellowy green in the glass. The nose presents notes of green apple zest, herbs and aromas from the aging process. On the palate, it’s mildly fatty, with keen, energetic freshness. The finish is a reprise of the nose. A long-lasting, expansive but austere wine.—J.H.
