Background

For over 130 years, Bodegas Williams & Humbert have been producing the finest sherries and brandies; as well as a diverse portfolio of spirits, utilizing one of the most traditional methods of ageing, the solera method. Founded in 1877 by Sir Alexander Williams and Arthur Humbert, Bodega Williams & Humbert has been considered to be one of the worlds most prestigious wine producers in the world. Located in the heart of Jerez de la Frontera, Bodega Williams & Humbert has more than 1,200 acres of vineyards, and the largest wine cellar in Europe. The family owned and operated Bodega has produced a great variety of high quality sherries, while maintaining the traditional methods of solera aging. Solera is a method of producing wines, where small amounts of younger wines are systematically blended with the more mature wines over a period of time.

Palomino grapes aged in oak casks for 5 years in the traditional Solera method.

Tasting Notes

Brilliant, pale gold Intense, complex aromas reminiscent of the yeast layer with a hint of almond. Delicate yet full-bodied, with character and elegance. A long aftertaste and nose.

The new bottling of NV Fino Pando has a golden color, which reflects a wine with less filtration. The problem is that these bottles are impossible to identify, as there is no mention on the labels about bottling date or saca, but it's bottled with an average age of five years under flor. It's expressive and elegant with aromas of esparto grass, olives, sea breeze and chalk. The palate is medium-bodied with pungent flavors and with a strong, chalky mineral finish with a strong bitter twist. -L.G.

The NV Fino Pando is a textbook Fino, with a golden color, a pungent nose of esparto grass, wet chalk and saltpeter. It comes from an old solera established in 1878 and has an average age of five years. They produced some 15,000 bottles in 2023. It's tasty, expressive and elegant, with aromas of esparto grass, olives, sea breeze and chalk. The palate is medium-bodied with pungent flavors, and the finish is strong and chalky with a bitter twist. -L.G.
