BackgroundLunetta (Little Moon in Italian) celebrates life's small pleasures. Lunetta Rose is produced by Cavit, internationally recognized as northern Italy's largest and most reliable source of quality varietal wines, at Cavit's state-of-the-art sparkling wine facility just outside the regional capital of Trento. It is the largest facility in Italy dedicated exclusively to producing world-class sparkling wines.
VinificationFirst the Glera grapes are soft pressed to yield only the best fraction of the must which, after being decanted for 12 hours, goes straight into stainless-steel tanks to be fermented. Fermentation lasts about 15-20 days. When completed, the wine is blended with Pinot Noir that is vinified using the method for red wines in order to give the final blend its characteristic pink color. Once blended, the wine undergoes a second fermentation in temperature-controlled stainless-steel tanks. The wine is then refined sur lie for 60 days.
